Cut brilliantly colored oranges into rounds and spread them on a platter before drizzling with a vinaigrette that brings out their juicy sweetness. A topping of tangy olives, crunchy pistachios and sweet basil leaves makes this salad irresistible.
Ingredients
- 6 medium seedless oranges
- 1/4 cup slivered red onion
- 1/2 cup pitted kalamata olives, sliced
- 1/2 cup fresh basil, sliced
- 1 tablespoon balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 cup shelled pistachios, toasted
Preparation
- Peel the oranges by slicing away the peel and pith, then slice into thin rounds. Place the rounds on a platter.
- Sprinkle the red onions and olives over the oranges, then sprinkle with basil.
- In a cup, whisk the balsamic vinegar, olive oil, honey and salt. Drizzle over the oranges. Sprinkle with pistachios and serve.
